This loaf is a canvas for varietal honeys. If you're unfamiliar with varietal honeys, they're basically honeys produced by bees that feed on a restricted crop, and thus take on the flavor of whatever nectar the bees consume. For this recipe, I'd recommend trying a nice orange blossom honey, though I've used coriander, carmelized wildflower, and (if you want to get crazy) meadowfoam with great success. One day I'll do a side-by-side with a few different varietals...
